Easter Recipe idea - Carrot Cakes by Crafty Cooks



Carrot Cakes are the perfect Easter treat and this simple recipe from Crafty Cooks is not only delicious, but very easy for little hands to make. Let us know how you get on!

Makes 6 cup cakes

2oz Self Raising Flour
1oz Brown sugar
1/2 Egg
1oz Butter
2oz Raisins
1/2 Medium carrot
1/4 tbs Honey
1/2 tbs Orange Juice
1/4 tsp Mixed Spice

1: Using your fingers, rub together the butter and flour until all the butter is hidden and looks like sand.
2: Stir in the sugar and egg. Grate in the carrot and mix in the remainder of the ingredients until all are combined.
3: Divide the mixture between 6 cake cases and cook for 12-15 minutes at 190oC/375oF/GM 5
